Summer Frittata Recipe: CSA Fresh & Local!

CSA frittata

This time of year, no matter how hard I try, I always have some random vegetables left. Here’s a list of what I received in my Groundswell Community Farm CSA share last week:
Basil
Radishes or Herb bunch (chives, sage, mint, thyme)
Bok Choy OR Cabbage OR Kohlrabi
Kale OR Chard
Garlic
Beets
Carrots
Summer Squash
Cucumbers
1 Pepper OR 3 Hot Peppers
Onion
Tomatoes
Beans

One of my favorite ways to use up random CSA vegetables is to make frittatas. They go together so fast and you can use pretty much whatever you have on hand!

This time around I used a bell pepper, a few beet greens, a small summer squash, leeks instead of onion, and a teaspoon of smoked mozzarella and tomato seasoning from Wildtree. Delicious!

Ingredients
6 eggs
1 medium onion, chopped
2 cups vegetables, chopped
1/4 cup cheese
salt, pepper, and herbs to taste

Instructions
Preheat broiler
If not using a nonstick skillet, place a little oil in a 10 inch skillet and heat
Add onion and soften for a few minutes
Add remaining vegetables and cook until desired doneness
Meanwhile, whisk together the eggs and seasonings in a medium bowl
Fold in the cheese and cooked vegetables
In the same pan, add a little more oil and cook the egg and vegetable mixture about 10 minutes, covered, until the top is mostly set
Place in broiler, uncovered, until the top browns
Cut into 4 wedges and serve

Grand Haven Farmers Market - Saturdays, 8am-1pm
Mid-May – late October
